2022年7月，勝記酒家中國華商中心店新裝，勝記餐飲攜手一方建境——打造蓉城品類粵味典范之外，他們也走完了一次推演品牌基因的旅程，將所有對城市的印象和珍饈的期待寫進了這家餐廳，也是這只屬于勝記酒家的“店味”。

　　01/ 店味

　　身居都市，回望自然

　　自然是山川

　　也是人情風物初生、變遷之路

　　都說“食在廣東”，一提起粵菜，大概每個人的腦海里都能瞬間列出一份List！皆因菜系龐大，食材眾多。

　　It is said that "eat in Guangdong", when it comes to Cantonese cuisine, probably everyone can instantly make a list in their minds!All because of the huge cuisine and many ingredients.

　　廣府菜、客家菜、潮汕菜……每一個都占據了粵菜江湖一席之地。而近年來新派粵菜也成了其中的佼佼者，備受年輕人追捧，例如——勝記。

　　Cantonese cuisine, Hakka cuisine, Chaoshan cuisine... Each one occupies a place in the Cantonese cuisine.In recent years, the new style Cantonese cuisine has also become one of the best, and it is highly sought after by young people, such as Shengji.

　　勝記三十三載，摘星十三顆，每家店，由本土食材入饌，貼合本地食客喜好，開出風格各具的食單，形成獨立于其他餐飲空間的味覺面貌 。勝記酒家這張新底片上，設計師將昨日風情聲色悉數納入場景并為其開新，對餐廳的場景氛圍的構建更優先于實體細部的雕琢。

　　Shengji has a history of thirty-three years and it has already opened thirteen branches, each branch uses local ingredients to serve the food, which suits the preferences of local diners.On this new film of Shengji Restaurant, the designer incorporated all the sensuality and sensuality of yesterday into the scene and opened a new one for it. The construction of the scene and atmosphere of the restaurant was given priority over the carving of physical details.

　　與此同時，上世紀的殖民歲月已成一場百年舊夢，與著色迷醉的南洋往事雜糅，一同融入了廣東變遷城記的歷史底色，在不間斷的碰撞和折中里，應運而生的眾多“新文化”神采飛揚，勝記便是其中一味。

　　At the same time, the colonial days of the last century have become a century-old dream, mixed with the fascinating past of Nanyang, and integrated into the historical background of Guangdong’s changing city."New Culture" is in high spirits, and Shengji is one of them.

　　從1989年35㎡的勝記面館，到現在擁有13家門店的“深圳老字號”勝記酒家，已經成為了深圳人的“粵菜食堂”。作為深圳經典老牌的粵菜，這是它第一次離開深圳來成都，落處在金融城的黃金地段，擁有3000平米的超大空間，每個包間都有一位“私人管家”，為食客打造專屬定制服務。

　　在蓉城人潮涌動的街邊，銅色玻璃移門里霓虹浮動、溢彩氤氳，駐足而入，即可乘著逆流的時光赴一場歷史舊憶、煙火人情的約。

　　On the crowded streets of Chengdu, the copper-colored glass sliding doors are filled with neon lights and colorful colors. If you stop and enter, you can take the time against the current to an appointment with historical memories and fireworks.

　　02/ 設計

　　構筑味覺空間的煙火人情

　　有了這樣的機巧 才有后來的空間畫意

　　好的園林，是園主、詩畫家和匠師合作的結晶。設計師量其廣狹，隨曲合方，方能造園于心；是在主者，得體合宜，才能未可拘牽。此案的“能主之人”，指的是最終呈現“此景”的設計師與業主方，有了這樣的機巧，才有后來的空間畫意。

　　A good garden is the result of the cooperation between garden owners, poets, painters and craftsmen.Designers measure the width and narrowness of the garden, follow the curve and fit the square, so that the garden can be built in the heart;The "capable person" in this case refers to the designer and the owner who finally presented "this scene". With such ingenuity, there is a later space painting.

　　結構立柱與通頂隔斷墻結合區域劃分，自然分隔散座區，客人與客人之間隔而不斷，煙火聲色共同納入整個餐廳，人的氣息相生流轉，依稀可見舊時排擋絡繹喧鬧的盛景，與城市的疏離感決然不同。五個卡包分散設置在大廳內側，合理利用面積之外，打破了嚴格區域劃分的死板形式。

　　The structural column and the top-passing partition wall are combined to divide the area, which naturally separates the seating area. The guests are constantly separated from each other. The sound and color of fireworks are integrated into the entire restaurant.The sense of alienation is decidedly different.The five boxes are scattered on the inside of the hall, and the area is used rationally, breaking the rigid form of strict regional division.

　　園林有動靜之分，小園主靜，借景有法，常以他物作我物；大園主動，寬敞有度，可以“流泉”拱門做收束，豐富空間動線，自成園景。

　　The garden is divided into static and dynamic, the small garden is quiet, borrowing the scenery has the method, and often uses other things as my own; the large garden is active, spacious and moderate, and can be used as a "flowing spring" arch to close, enrich the space flow, and form a garden landscape of its own.

　　漫步公區， 隔間、連廊與各個功能島臺之間，有著近似于滄浪亭的“間隙”。視線恰好就像從斜廊上行走時的驚鴻一瞥，一覽無余，此為攬之有物。

　　Walking in the public area, there is a "gap" similar to the Canglang Pavilion between the compartments, corridors and various functional islands.The line of sight is just like the startling glance when walking on the sloping corridor, and it is unobstructed.

　　園之佳者如詩之絕句，詞之小令，皆以少勝多，有不盡之意。空間畫意也是如此，薄紗窗簾透出夜色，引驕陽與晚霞入室，天空作景，食得幸焉。

　　The best ones in the garden are like the quatrains of poems and the small orders of the words.The same is true for the space painting. The tulle curtains reveal the night, bringing the scorching sun and sunset into the room, and the sky is the scene.

　　動線層次的豐富，可以拓展空間的密度。空間設計中的光影運用與“借景在因”，巧妙隱藏在這個“見”字訣里。

　　The richness of moving lines can expand the density of space.The use of light and shadow in the space design and "borrowing scenery is the cause" are cleverly hidden in this "seeing" formula.

　　也有燈盞似“江楓漁火”，木欄作船，停船在岸，這船上有酒，酒香四溢， 更有茶香墨味書卷案頭，以多媒體影像手段營造出傳統空間，意在營造“琴棋書畫，鳥語花香”中式優雅用餐環境道出了空間語言的連續性，讓勝記的故事，講得委婉動聽，使餐廳于古雅中包含熱情。

There is wine on the boat, the aroma of wine is overflowing, and there are also books and desks with the scent of tea and ink, creating a traditional space by means of multimedia images, which is intended to create a "qin"."Chess, calligraphy and painting, birds singing and flowers fragrant" Chinese elegant dining environment expresses the continuity of space language, makes the story of Shengji tactful and pleasant, and makes the restaurant contain enthusiasm in quaint elegance.

　　包廂的居正與靈動同時存在，空間與光線的精準運用，將謙遜與優雅結合于此 廂內休息區將餐廳的高端與私密氛圍推向高潮，梅花窗以建筑化的方式出現，光線的通透與視線的隔斷得到滿足。

　　The uprightness and agility of the box exist at the same time. The precise use of space and light combines modesty and elegance. The lounge area in the box pushes the high-end and private atmosphere of the restaurant to a climax.The separation of perspective and sight is satisfied.

　　至空間細部與器物選定階段，主創設計親自參與了這一過程——紅綠杯碟、緋色桌巾、織錦椅面、獅頭繡球、花磚雙喜......對器物和色彩自然流露的傾向性成為了設計師挖掘品牌基因的另一入口，沿著這一脈絡向前，南洋與嶺南風情中的明艷色彩沉入底色，民俗文脈跳脫出符號演繹或刻意當代化，落落大方地裝點空間，與現代材料融合輝映，直白而準確地擊中人心。

　　From the stage of space detail and utensil selection, the main designer personally participated in the process - red and green cups and saucers, crimson tablecloths, brocade chair surfaces, lion head hydrangea, tile double happiness... The utensils and colors are natural. The inclination revealed has become another entrance for designers to tap the brand gene. Moving forward along this vein, the bright colors of Nanyang and Lingnan styles sink into the background, and the folklore jumps out of the symbolic interpretation or deliberately modernized, falling down.Decorate the space generously, blend with modern materials, and hit the heart directly and accurately.

　　人情風物交融，在場所中激蕩出獨一無二的煙火氣，勝記的場所精神也就此達成

　　The fusion of human feelings and customs creates a unique firework atmosphere in the venue, and the spirit of Shengji's venue is also achieved.

　　03/ 基因

　　煙火之氣，動靜之觀

　　堂內華彩余輝氤氳   至味人情生生不息

　　空間永遠不可能脫離品牌而獨立存在，對于勝記酒家而言，品牌基因一度如滄海沉珠未被挖掘，設計師正是要通過空間構筑的過程幫助品牌找到并呈現其精神內核。后疫情時代下，對于重投入的餐飲行業而言，能以較低成本撬動品牌升級并達到超出預期的效果，對于品牌和市場而言都是更優選。

　　Space can never exist independently of the brand. For Shengji Restaurant, the brand gene was once undiscovered like a pearl in the ocean. The designer wants to help the brand find and present its spiritual core through the process of space construction.In the post-epidemic era, for the heavily invested catering industry, it is more preferable for the brand and the market to be able to leverage brand upgrades at a lower cost and achieve results that exceed expectations.

　　從對餐飲品類的研究到對地域文化的演繹梳理，再到激發創始人在整個設計過程中的參與度，“店味”也在這種多向奔赴中逐漸從迷霧中顯現出來，對于設計師來說，設計更多因勢而為的自然流露，只需整理表達，其義便可自現。

　　From the research on catering categories to the interpretation of regional culture, to stimulating the founder's participation in the entire design process, the "store taste" has gradually emerged from the fog in this multi-directional rush.In other words, the design is more natural in response to the situation, and its meaning can be self-realized only by sorting out the expression.

　　灶上砂鍋沸騰，密集的油脂清脆爆裂；蓉城老饕順著魚段中間的脊骨將魚肉咬下，彈性肉質對牙齒一瞬間的反抗后，是隨著魚肉破裂涌出的凝實鮮味......

　　The casserole on the stove boiled, and the dense oil burst crisply; Rongcheng Lao glutton bit down the fish meat along the spine in the middle of the fish segment. After the elastic meat resisted the teeth for a moment, it was the solid umami that gushed out with the cracking of the fish meat.

　　侍者與鄰座的面孔并不清晰，餐廳籠罩溫馨而眩暈的光芒，淡霧氤氳繚繞，召喚一碟一盤亮相瞬間：光彩照人，夜色沉醉。

　　The faces of the waiter and the seat next to it are not clear, and the restaurant is shrouded in a warm and dizzying light, shrouded in light fog, beckoning a moment of appearance: radiant, and the night intoxicated.

　　歷史悠然，千帆過盡，堂內華彩余輝氤氳，相似的是煙火氣里生生不息的至味人情。

　　The history is leisurely, the thousands of sails have passed, and the afterglow of the hall is full of colorful afterglow, similar to the endless human feelings in the fireworks.
